Carbonara with Melon Caprese & Spinach Salad

Bring water to a boil. Prepare the ingredients for the salads and pasta dishes. Saute the proscuitto or bacon until crisp. Toss the melon caprese together. Place the pasta in the boiling water. Whisk the salad dressing for the spinach salad. Whisk the egg with the remaining sauce ingredients. Toss the spinach with the dressing just as the pasta finishes up. Drain the pasta and toss with the sauce & bacon to finish the dish.
