Melon Caprese

Fresh mozzarella, basil and… melon! It is a delightful salad to pair with any meal that needs a bit of summer freshness.

Ingredients

  • lb melon, such as honey dew, halved and seeds removed
  • 4 ounces fresh mozzarella
  • ½ cup fresh basil
  • 1 teaspoon lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

If you have a melon baller, scoop out balls of melon. If you do not have a melon baller, cut off the skin and cut into smaller chunks.

Cut the fresh mozzarella into a size that is similar to your melon. Tear the basil into pieces. Toss the cheese, fruit & basil with a splash of lemon juice, olive oil, salt and fresh black pepper.

Sample. Adjust and add flavors as desired.
