Cajun Rice, Okra & Tomatoes

Cook the rice, if not already done. Toss together the cajun spices. Saute the onions and other vegetables. Whip up the cajun aioli. Slice and start dipping the green tomatoes. When the Dirty Rice is about 15 minutes from being done, start frying or baking the green tomatoes. Grill the okra briefly. Serve the okra and tomatoes on top of the rice with a dollop of the aioli on top or on the side.

Be careful. This dish can be addicting. Our vegan variation omits the chicken livers, pork and other meat, so consider this “almost” dirty rice since we just focus on melting the veggies into the rice and a bit of spicy cajun seasonings.

Cajun Spice Rub

This simple rub turns a regular piece of meat or tofu into something extra special. Adjust the seasonings to your taste. Start with a pinch of cayenne and add more as you are able to tolerate it. This is a simple blend that can be dolled up with extras such as garlic, onion or mustard powders.

Grilled Okra

Tired of slimy okra? Try grilling it instead! The smaller the okra the more tender it will be. Larger, older pieces of okra may have a woody texture, so reserve this method for the small ones.

Fried Green Tomatoes

Just before a frost can nab them, grab a stack of green tomatoes, slice and fry them up in a quick and easy buttermilk dip. The breading is your favorite flour tossed with cornmeal, which gives it a little crunch. If you want to skip the cornmeal, just substitute the flour instead. You may need more or less buttermilk and flour depending on your number of green tomatoes. Adjust the salt and spice to taste as needed. Make a vegan buttermilk by mixing a tablespoon of a neutral vinegar (apple cider or white wine) with a cup of your favorite non-dairy milk.
