Happy November! Weather is clearly cooling, storming and wrecking a bit of havoc in parts the country. As often as time (and in some cases available electricity & running water) allows dine at home with some of this week’s comforting and easy meals.
Comfort and nourish yourself with Sweet Potato & Bean Shepherd’s Pie with Orange Hatch Chili Salad. Also, try a comforting twist, with the Asian Daikon Soup with Sesame Tofu and Red Chili Green Beans. Dinner can also channel the Renaissance as you skip the silverware, grab extra napkins and dive into Turkey Legs with Sweet Potato Fries, Kale Chips and a Honey Dijon Dressing for dipping it all. By the way, if you are planning an intimate Thanksgiving, Turkey Drumsticks are as easy as can be for a tiny crowd. They are also large enough that you may just have enough leftovers to sear up the Apple & Turkey Grilled Cheese.
Whenever I buy tofu, it is often more than I need, but I don’t mind because we are all big fans of the Curry Tofu Salad for lunches. There is also a bit of coconut in that curry salad, which gets even more attention in the Coconut Salmon & Coconut Squash with Coconut Kale Salad dinner.
The Ricotta Pear Pizza with Arugula Parmesan Salad is a perfect way to use seasonal pears. Extra ingredients simmer lightly into the Poached Pears with Spiced Ricotta for a beautiful breakfast.
We are entering the time of year when dark leafy greens are more common than others, beyond the Kale Chips & Kale Salad, try a Kale Smoothie for breakfast along with a simple Egg in a Hole to give a twist to the simple egg & toast.
