Week of January 27, 2013

With the Superbowl next Sunday, this week is all about snackable, smackable, dippable delights. Of course, the normally heartburn producing treats will be given a seasonal treatment with plenty of vegetables packed in. Starting with a bean based Winter Nachos and Squash Nacho Cheese Dip. Mix and match those nacho possibilities with Homemade Chips, Black Bean Dip, Feta-Guacamole, Grapefruit & Avocado Salsa and a crazy in season Sunchoke Salsa.

This medley of Mexican inspired toppings also match well with a week day meal of Coconut White Bean Tostadas. Since beans can’t have all the fun with coconut this week, try Coconut Fried Shrimp which are made for dipping into Avocado Cream with a side of Banana Roasted Sweet Potatoes.

The Spicy Asian Wings and Beet Fried Rice are a quick nod to the 49ers fans as San Francisco is one of my favorite places to dine on Asian cuisine.

Forgive me, but I just do not have a recipe to share for the Raven’s famous Pit Beef sandwiches, but try instead these Roast Beef & Apple Sandwiches smeared generously with horseradish and add a side of Horseradish Green Salad for good measure, for a much more humble substitute.

Because the Superbowl will be played in New Orleans treat yourself to a Cajun Egg Sandwich for breakfast. Freshen it up with a Blueberry Smoothie. Leftovers of the Mexican possibilities I listed above make for a quick morning of Breakfast Tacos with Grapefruit-Avocado Salsa.

Because not everyday this week should be inspired by football, try out a perfectly dreary winter day Split Pea Soup with bright Caramelized Lemon & Pistachios
