For those of you who read the weekly newsletter, you already know that my family and I are packing up and moving out. We will sadly be in transit on St. Patrick’s Day, but at least I get to share some of my favorite Irish inspired dishes with you! For Corned Beef & Cabbage lovers who want to brine your own from scratch, start today to brine it up your own. Then try out the Slow Cooker Corned Beef on St. Patty’s. Leftover corned beef will become lunch as Corned Beef Sandwiches and Corned Beef Hash for breakfast is a favorite in our home.
Vegetarian’s can go leprechaun style enjoying the
‘Shamrock Butter’ made with sorrel with
Irish Soda Bread and Eggs. Additional sorrel makes a vibrant Sorrel Salmon with Kale Potato Pancakes. Vegan’s will enjoy celebrating with the Lentil Shepherd’s Pie.
