Apricot Celery Salad

The crunch of the celery against the creamy sweetness of the apricots is delightful. Try this salad when you are ready to branch out of the ordinary green salad and you have a few apricots needing attention. Other stone fruits, such as peaches may work as well, but I have yet to try it.

Ingredients

  • 1 lemon
  • 1 teaspoon dijon mustard
  • 3 tablespoons extra-virgin olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 4 stalks celery, sliced paper thin on the diagonal
  • 3 apricots
  • ½ celery seed, optional
  • ½ ounce parmesan cheese, optional

Serving Size: 2 People



 

Preparation Instructions

Whisk together the lemon juice and dijon mustard. Slowly drizzle in the olive oil while whisking wildly. Stir in the pinch of salt & pepper.

Fold in the celery and allow to rest. Just before serving, thinly slice the apricots and toss in with the lightly marinated celery.

Finish with a sprinkle of celery seed to bring out the celery flavor a bit more and a few peels of parmesan cheese cut with a vegetable peeler, although each one is optional.
