Chipotle BLT Wrap with Purslane Corn Salad

Cook the corn first, or cut it off leftover corn on the cob. Start searing the bacon. Whip up the dressing for the salad and the chipotle mayo. Wrap up the BLT and toss the salad. If taking to go, you may want to package your juicy tomato slices to be added on just prior to eating.

Purslane & Corn Salad

An easy dressing is tossed with the succulent leaves of purslane and sweet kernels of corn. Also called verdolaga, purslane is a common weed gaining culinary popularity at sustainable farms. If you cannot find purslane, baby spinach or watercress will work well instead.
