Prepare the eggs, bacon and then start the tortilla strips. While each of these sear or cook, blend up the cilantro dressing and chop up the remaining vegetables. Arrange the lettuce on a plate, top with the eggs, bacon and tortilla strips. Drizzle with the Cilantro Dressing. Assemble each item individually to take for lunch on the go.

Make your next Cobb Salad into a Fiesta! When tomatoes are fresh and delightful it is time for this salad. Fresh corn is ideal, but frozen can work in a pinch.
