The Food
Summer is such a sweet time. Not just because of vacations, warm weather, days off and other reasons to be blissful, but because of all the fresh abundance of fruit. We dine on peaches for breakfast with these Summer Squash Pancakes with Almond Peaches. Also, for snacks and dessert with the Peach Smoothie.
However, adding a bit of fruit to your lunch and dinner will add extra joy to every meal. The Herb Stuffed Peaches and Stone Fruit, Kale & Beet Slaw are playful paired with the Summer Squash Pancakes. Meanwhile, Asian inspiration gives the Spicy Almond Eggplant and the Thai Broccoli Salad even more glamour with the Thai Melon Salad.
Wrapping long strips of summer squash around a favorite cut of fish as in these Zucchini Wrapped Halibut creates a beautiful main dish, but the side of Plum, Summer Squash and Avocado Salad lends sass and style.
Since tomatoes are technically a fruit, they keep our fruity theme this week with the Fiesta Cobb Salad and the Tomato, Avocado, Cucumber Sandwich for lunch.
This week’s rebel meal is the Zinful BBQ Shredded Chicken Sandwiches with Coleslaw and Baked Beans, which encompasses so much of summer that you will just have to save your fruit for dessert. Making it a perfect excuse to try the Strawberry Frozen Yogurt.
