Tomato, Avocado, Cucumber Sandwich

from Tomato-Avocado-Cucumber Sandwich, the Week of August 4, 2013

Get them while tomatoes are juicy and cucumbers are tender and in season! A thin layer of mustard is all you need. Add lunch meat or sliced cheese if you so need, but this veggie packed sandwich is filling and fabulous.

Ingredients

  • 4 slices whole wheat bread, or gluten-free
  • 2 tablespoons dijon mustard, or your favorite mustard
  • 1 avocado
  • 2 tomatoes, small-medium, thinly sliced
  • 1 cucumber, small, thinly slice, only peel if the skin is bitter

Serving Size: 2 People



 

Preparation Instructions

Spread the mustard on the inside of each piece of bread.

Cut the avocado in half. Remove the pit. Hold half of the avocado in one hand. Slice into the center of the avocado creating thin slices. Using a large spoon, scoop out the avocado slices.

Arrange on the halves of bread. Top with the sliced tomatoes and cucumbers.

Place it together and take a huge veggie filled bite.
