Oh summer! It is so easy to be lead by the produce, dining on as much freshness as possible until satisfyingly full. Just a few additional ingredients are needed to create a meal with all of these delights.

When peppers of any variety are abundant, Steak Fajitas are a simple go-to dish by adding steak and tortillas. Pair with grilled Elote Corn to make dinner feel more elaborate.

Imagine a veggie Chili without all of that simmer time heating up your kitchen. Simply take chili beans throw in a bunch of available garden fresh vegetables for the Chili Bean Sauté. Next, pair it with a side of Chipotle Sweet Potatoes and Pico de Gallo.

High-protein quinoa plays well with vegetables especially smashed into easy Quinoa Patties to sear and serve alongside Sweet Pepper Coulis and Eggplant Caponata. Make extra quinoa and toss it with nuts for a lunch with the leftover Eggplant Caponata. Another great option is to stuff it in tortillas for Zucchini, Corn, Quinoa Wraps. The wrap is made especially sweet with the Cucumber Melon Salad.

For a pretty week day meal, blend fresh berries into a dressing for the Salmon Raspberry Salad. Leftovers are perfect for the Salmon Sandwiches with Raspberry Salad for lunch on the go.

Breakfast can also be produce packed with the Tortilla Egg Wrap and Peach Smoothie. Of course, if you have an abundance of zucchinis, especially those crazy baseball bat ones make this Chocolate Zucchini Bread. Pair the bread with darling Herb Stuffed Peaches and charm your way through the morning.
