Zucchini, Corn & Quinoa Wraps with Cucumber Melon Salad

Saute the onions. Simmer the quinoa. Prepare the remaining ingredients for the wraps. Slice the salad ingredients and make the dressing. Assemble the wraps, bake if needed and toss the salad.

Zucchini, Corn & Quinoa Wraps

A saute of fresh summer vegetables are packed into a tortilla along with quinoa and corn. While it is tasty without cheese, I certainly love these a tiny bit more when I include it. We start with an ear of corn, just cut the kernels off raw and use in the recipe. Alternatively, frozen corn is another reasonable option.

Cucumber & Cantaloupe Green Salad

Summer sweet melons and crispy cucumbers are tossed with a Lemon-Lime Yogurt Dressing. Goat cheese and pistachios add another element, but are each optional. The citrus zest makes the dressing delightful, but if you are without a microplane or fine grater, no worries, the juice is more important.
