Raspberry Dressing

from Salmon Raspberry Salad, the Week of August 11, 2013.

Whisk together mashed fresh or defrosted raspberries. Perfect for berries that are not super sweet as this dressing has a touch of honey in it.

Ingredients

  • 1 cup raspberries, fresh or defrosted
  • 1 tablespoon dijon mustard
  • 1 tablespoon red wine vinegar
  • 1 tablespoon honey, or agave nectar (to make it vegan)
  • 1 pinch salt
  • 1 pinch black pepper
  • 3 tablespoons olive oil, extra virgin

Serving Size: 4 People



 

Preparation Instructions

Gently wash the raspberries in a bowl of cold water. Drain and place in a wire mesh strainer and mash the raspberries through it. Throw the seeds away. Whisk the mustard, vinegar, honey, salt and pepper into the raspberry pulp. Slowly drizzle in the olive oil while whisking rapidly.
