Tofu Scramble

Since this is just a base recipe feel free to add in any veggies that you might enjoy in a scramble. Protein packed tofu makes an easy scrambled egg-like breakfast without using any eggs. This is great for vegans, but it is also a personal favorite. Nutritional Yeast adds a nutty almost cheese-like taste as well as a vitamin boost of B’s that every vegan will benefit from.

Ingredients

  • 1 teaspoon olive oil, extra virgin
  • 2 green onions, roughly chopped
  • ½ lb tofu, extra-firm
  • 2 tablespoons nutritional yeast
  • ½ teaspoon turmeric
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Serving Size: 2 People



 

Preparation Instructions

Place a skillet over medium heat. Add the olive oil and green onions. Once the green onions start to sizzle crumble the tofu. Toss and break apart while the tofu is lightly cooked. Add a splash of water if the tofu begins to dry out or stick to the pan. Sprinkle in the nutritional yeast, turmeric powder, salt and pepper.

Add more seasonings to your personal taste and serve while it is hot & steamy.
