Whip up the pancake batter. Start searing the pancakes. You can even toss in a few sliced almonds for extra texture and protein. While they sear, slice the peaches and toss with the almonds & extract. Serve the pancakes with a dollop of yogurt or ricotta cheese. If you like them sweeter you may want a bit of warm maple syrup too.

Almond Pancakes

Fluffy, gluten-free, low-glycemic pancakes are attained through beating the egg whites and adding almond flour. A splash of almond extract will add to the flavor, but it is an optional addition. There are lots of options to make these pancakes your own including the milk & flour you prefer to use at home.
