Watermelon Stack with Crispy Zucchini Sticks & Dip

Prepare the Watermelon Stack first until it is being pressed in the fridge. This can even be done the night prior. A half hour before serving dinner, prepare the Crispy Zucchini Sticks. While they bake, make the yogurt dip and finish the Watermelon Stack.

Watermelon Stack Salad

Ever sliced your salad before? Stack and press this salad together for something new & exciting. Of course, this is a touch time consuming and the ingredients work well just tossed together in a mish-mash of fun instead. Substitute pine nuts for the cotija cheese to make this dairy-free/vegan.

Crispy Zucchini Sticks

Zucchini sticks are breaded and baked into crispiness. The combination of the breading can be mixed and matched as needed to whether you want it to be fully gluten-free (skip the pankos), or dairy-free (skip the Parmesan) or nut-free without the almond meal. The key is to use two out of the three ingredients and just adjust the proportions accordingly.

Yogurt Herb Ranch Dressing

This easy dressing is an excellent substitute for chemical-dense ranch or buttermilk dressings or dips. Adding yogurt will increase the amount of good bacteria acidophilus in your dressing. Although, thick cultured buttermilk is a great substitute. If you want a thicker, ranch to dip, use greek yogurt or cultured sour cream instead. If using a fresh lemon, add the microplane grated lemon zest for a flavor boost. Use your favorite herbs that are available. If you are not a garlic lover, this is tasty enough without it.
