Chili Bean Saute over Chipotle Sweet Potatoes with Pico de Gallo

Roast the sweet potatoes to start. Chop the veggies for the saute and start to cook the onions. Prepare the pico de gallo salsa as well. Saute each vegetable finishing with the beans. Whip the sweet potatoes with the chipotle and serve the saute on top with the pico de gallo on the side.

Chipotle Sweet Potatoes

Spicy chipotle mixed with sugary roasted sweet potatoes is a simple side for Mexican dishes instead of Spanish rice. Use chipotle peppers in adobe sauce, chopped up, or chipotle powder. Add more or less spice to your personal taste.

Chili Bean Saute

Ingredients from a comforting bowl of chili are made into a quick saute that is on the table in a flash. This is great on top of something starchy such as rice, grits, polenta or even a pile of Lime Sweet Potatoes. Extra protein such as a sprinkle of cheese or your favorite meat would be lovely too. Hatch chilies are easy to find roasted, fresh, frozen or canned, but anaheim chilies substitute nicely and are easy to roast if necessary.
