Happy Autumn Equinox!
Most gardens and kitchens, if you are lucky, are pouring with everything from fruit & roots to tomatoes, peppers, sweet potatoes and spaghetti squash. A cook’s dream. Now let’s inspire you and your family too.
Meals do not get much simpler than the Cheese & Mustard Zucchini Delight with Fresh Tomato Sauce. There is also the Chili Bean Sauté over Chipotle Sweet Potatoes with Pico de Gallo. The leftover Chili Bean Sauté is perfect with a Carrot Tofu Scramble for breakfast.
For these easy dinners, I give full permission to cheat and buy your favorite salsa or bruschetta topping instead, but of course with tomatoes so fresh & delightful I rather encourage you to give these sauces a go. Especially since you can use the extra Tomatoes & Basil on top of Runny Eggs & Greens for breakfast. Also, the Pico de Gallo will make lunch more exciting paired with the Squash Nacho Cheese Dip, Black Bean Dip & Homemade Chips. Of course, these dips will make the start of Football season a bit more fun too.
Some of the other dinners this week may seem at first glance a tad more involved, but they are actually straight forward, delicious and therefore cannot be missed. Cream up the elusive kohlrabi (turnips, rutabagas or other white roots could be a great substitute, if you cannot find kohlrabi) and stuff inside of Kohlrabi Stuffed Poblanos. The Pad Thai needs to be enjoyed while peppers and cilantro are still delightful, too.
The Creamy Dijon Chicken with Seared Figs over Spaghetti Squash is the perfect romantic combination of summer and fall. Extra figs are perfect in the Black & White Bean and Fig Salad to take for a delightful lunch on the go. For a quick, finish up your red tomatoes lunch, the Tomato Avocado Sandwich works, too.
