Fish Almondine & Marsala Squash

Buy the freshest, most sustainable fish you can find- see the recipe for more tips. The Almondine sauce recommends using amaretto, but paired with the Marsala Acorn Squash feel free to use the Marsala for the fish as well. An extra vegetable such as the Roasted Kale compliments the meal adding a slightly bitter element to the light sweetness of the fish & squash.

Make it dairy-free by leaving out the cheese for the squash and using olive oil instead of butter.

Marsala Acorn Squash

Acorn Squash is baked with a little puddle of sweet marsala wine. Substitute another sweet sherry, rose or sweet white wine instead. It is finished with a generous dollop of ricotta or mascarpone cheese and a tiny drizzle of honey. If you ever make fresh ricotta, this is the place to use it.

Kale chips are probably our favorite way to make kale. Roasted with a light drizzle of olive oil, salt and black pepper, if you so choose. They are simple to make and addictive to boot.

Fish Almandine

Sliced almonds encrust flakey white fish and are seared until golden. A lightly sweet sauce of almonds takes this dish even further.

Select your fish with the help of the Monterey Bay Aquarium’s Seafood Watch. Some of the best white fish choices right now include: Pacific Cod, Pacific Halibut, US Farmed Tilapia & Catfish. Some other good alternatives include: Turbot (shown in the photo) and Pacific Sole or Flounder.
