Sausage & Pepper Saute

A quick saute of peppers, onions and tomatoes tossed together with slices of sausage, which do all of the work to flavor your dish. Serve on top of pasta, polenta, or even mashed potatoes.

This is a one pan dish. If you are in a hurry, use an extra skillet and saute two items at one time.

Ingredients

  • 2 italian sausage s, links, your favorite kind
  • 1 teaspoon olive oil
  • 1 onion, cut in half & then long strips, end to end
  • 1 bell pepper, stem removed, cut in long strips
  • 1 clove garlic, finely chopped or crushed
  • 14 ounces roasted crushed tomatoes, can
  • 1 tablespoon fresh herbs, oregano, basil, thyme, parsley or dried herbs work too

Serving Size: 2 People



 

Preparation Instructions

Place a skillet over medium heat. Add the links and sear on each side, turning every 3-5 minutes. Once evenly browned, set aside to cool before slicing.

Add a splash of olive oil to the skillet. Add the onions, increase the heat just slightly and saute lightly for 3-5 minutes, until slightly wilted. Add in the peppers and continue to saute until softened and slightly golden.

Meanwhile, slice the sausage into diagonal pieces. Remove the peppers & onions and add the sausage back into the pan and sear on each side for 2-4 minutes.

Add the peppers & onions back in with the crushed garlic. Saute for about 2 minutes and then pour in the crushed tomatoes. Bring up to a simmer.

Toss in the fresh or dried herbs if you like and serve on top of polenta, pasta, mashed potatoes or even a hoagie roll for a hot sandwich.
