Roasted Potatoes

from Chocolate Stout & Pumpkin Beef Stew, the Week of October 27, 2013.

Tossed in olive oil these potatoes roast up to be soft on the inside and crispy on the outside.

Ingredients

  • ½ lb potatoes, red-skinned, yukon gold are lovely
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • 1 pinch black pepper, to taste

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 400.

Cut the potatoes into quarters or halves just to get them to an even size.

Toss with the olive oil. Spread on a baking sheet and season with the salt and pepper to taste.

Roast for 25-35 minutes until soft to the bite and lightly golden on the outside.
