Happy Halloween week!
Most of us think about candy, but the origins of this unique holiday are based on one of my favorite topics— the harvest.
Unlike other holidays there are very few traditional dishes, but in my house I remember pizza growing up. Try this harvest focused Ricotta Pear Pizza. Later we started the tradition of a crockpot of steamy Curried Pumpkin Soup to sip on between trick-or-treaters coming to the door.
A variety of produce from pumpkins to apples and even broccoli are happily brought in from the colder days for dinner. Sit down to a variety of Autumn salads from the Apple-Blue Cheese Salad to a simple Arugula Salad and the slightly more elaborate Roasted Pumpkin Salad.
October is also a great time to bring in mushrooms and the Savory Mushroom Crumble is a perfect way to showcase them. The Mushroom Tuna Noodle & Broccoli is a vegetable packed version of the comforting tuna noodle casserole. Extra broccoli, turns into a fancy breakfast of Broccoli, Brie & Apricot Scramble.
Of course, it is hard not to consider chocolate this time of year. But, chocolate does not always need to be candy to be good. This Chocolate Stout & Pumpkin Beef Stew proves that.
In addition, there are Pumpkin Muffins with Maple Cream Cheese worth munching on in the morning or bringing with you to a party. While you are heading to a party or maybe warding off a sugar crash, try the Kale Chips, Popcorn, Apples & Nuts for a snack or lunch on the go.
Another great lunch would be a thermos of leftover Curried Pumpkin Soup with Apple Quesadillas.
Harvest yourself a Happy Halloween and may it be full of goodness and no scary foods!
