Apple Quesadilla

from Curried Pumpkin Soup with Apple Quesadillas, the Week of October 27, 2013.

Its simple, but surprisingly lovely. I won’t pretend this is complicated. Just use a fabulous apple and your favorite cheddar. Enjoy.

Ingredients

  • 2 tortillas, flour or corn
  • 1 apple
  • 2 slices cheddar cheese

Serving Size: 2 People

Preparation Instructions

Throw a cast-iron pan or skillet over medium heat and toss in your tortillas.

Thinly slice an apple, enough to cover your tortilla. Nibble on any extra apple or make another quesadilla with it.

Flip over the tortillas and fill with the slices of cheddar and sliced apples.

Top with the other tortilla. When it becomes toasty and golden. Flip over. If it is heating too quickly, simply reduce the heat.

When the cheese is melted and gooey goodness— it is done.

It is also tasty with a dollop of sour cream.
