Roast Beef with Warm Portabella Salad and Horseradish Smashers

The Roast Beef takes the longest time. Prepare the Smashed Potatoes at anytime and warm in the oven for the final few minutes. The Warm Portabella Salad can also be prepared somewhat in advance. Simply warm the mushrooms at the last moment and toss on the greens just prior to serving while the roast beef rests.

Roast Beef

Roasting a cheap, marbled cut of beef on low heat slowly creates the roast beef your grandmother would approve of. A thermometer is a cheap investment and the best way to know when your meat is done. You can often find them at grocery stores for a few bucks.

Horseradish Smashed Potatoes

Tangy yogurt & fresh horseradish are smashed into red potatoes. This side works well with beef, vegetables or any dish where you might use a Horseradish cream sauce.

Warm Portabello Salad

Strips of portobellos are sauteed with olive oil and balsamic and placed on arugula until it wilts and sighs. If vegan or dairy-free omit the Parmesan, simply double the walnuts and use olive oil instead of butter.
