Roast Beef Sandwich with Cranberry & Blue Cheese Spread

Store bought roast beef or leftovers from a homemade roast beef are paired with a layer of cranberry sauce, such as our Cranberry Cherry Syrah Sauce and a yogurt-blue cheese spread. Just a few greens liven up the center, but if you love sweet onions a few slices would work here as well.

Ingredients

  • 2 ounces blue cheese
  • 2 tablespoons plain yogurt
  • ¼ teaspoon black pepper
  • 4 slices whole wheat bread
  • 2 tablespoons cranberry sauce
  • 1 cup baby spinach
  • 4 slices roast beef, leftovers or store-bought

Serving Size: 2 People



 

Preparation Instructions

Whip together the blue cheese, yogurt and black pepper. Add more blue cheese if desired.

Lay out the bread. Spread the blue cheese mixture on one half and the cranberry sauce on the other.

Top with the roast beef slices and spinach. Press together and enjoy.
