Sun-Dried Tomato Meatloaf with Sweet Potatoes and Broccoli

Preheat the oven. Chop the onion and start to sauté. Prick the sweet potatoes all over and place in the oven as it starts to warm up. Prepare the remaining ingredients for the meatloaf. Once the onions have become translucent add to the mix and prepare the meatloaf for the oven. While they bake, mix the tomato sauce and prepare the broccoli. Just prior to serving, mash the sweet potatoes slightly and steam the broccoli.

Sun-Dried Tomato Meatloaf

Italian herbs, pine nuts & sun-dried tomatoes liven up this meatloaf, which works well with ground bison, beef or even turkey. When using oats, you can skip the typical breadcrumbs. Plan to use quick-cooking oats. If you only have rolled oats, toss them in your blender for a few seconds. If you do not have a loaf pan handy simply mound it up and form it into a log in the center of a baking dish.

Sweet Potato Goodness

Whole sweet potatoes tossed in the oven until tender are just about the easiest base to a great meal. Once out of the oven, there are so many possibilities, eating the skin adds nutrients, while peeling it away leaves you with a sweet mash to be devoured. A bit of salt, butter or coconut oil will complete this dishes divine simplicity.
