Blood Orange Vinaigrette

from End of Winter Salad Bar with Blood Orange Vinaigrette & Quinoa, the Week of March 16, 2014.
View the next recipe for this meal.

This is a great winter replacement for a Raspberry Vinaigrette. If you do not have blood oranges handy, use regular orange juice instead.

Ingredients

  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, finely minced/pressed
  • ¼ cup blood orange, juice, or regular orange juice
  • 1 pinch salt
  • 1 pinch black pepper
  • 3 tablespoons extra-virgin olive oil

Serving Size: 4 People

Preparation Instructions

Combine the garlic and vinegar, especially if you find garlic to be too strong- this can help mellow the flavor.

Whisk in the juice, salt & pepper. Slowly drizzle in the olive oil while whisking madly.

Alternatively, place all of the ingredients in a small jar and do a little shake while dancing until they are well combined. You may want a buddy for this- the shake the vinaigrette dance can be hard work sometimes.
