End of Winter Salad Bar with Blood Orange Vinaigrette & Quinoa

All of these ingredients can be made ahead and stored until you are ready for your spread of salad toppings. If making just prior to enjoying, cook up the quinoa and eggs first. Whip up the dressing. Finally, prepare each of the vegetables.

Quinoa

One of the highest protein grains out there. Here is a simple preparation for boiling this happy gluten-free grain. Cook it until your preferred texture. I like it when the tail has started to uncurl and there is not much of a crunch left. In some cases (such as at higher altitudes) you may need to add more water.

Hard Boiled Eggs

For easy peeling, it is better if the eggs are a bit old. Not too old, but if possible buy them a week prior to boiling. Or better yet, when you see some eggs in the back of your fridge you forgot about, test them by dropping them into a cup of water. If they float, say good-bye to those bad eggs. If they drop but one side is considering standing up, they are perfect for hard-boiled, easy peel eggs. Super fresh eggs still boil and peel, but with a bit less ease.

Preparing a series of vegetables- thinly sliced, shredded or cut into whatever shape or texture you prefer for salad- is a great way to make salads quickly throughout the week. It is like your own personal salad bar in your fridge. Use whatever produce you have available, prepare, and store in containers that are easy to pull out for a quick salad.

Blood Orange Vinaigrette

This is a great winter replacement for a Raspberry Vinaigrette. If you do not have blood oranges handy, use regular orange juice instead.
