My ode to the Beatles White Album, simple chicken and a white on white side of pan-roasted cauliflower and spaetzle- the tiny German dumplings.
Try sprinkling everything with herbs if you are feeling blinded by the white.
The dairy & gluten can both be easily avoided in this dish.

Cauliflower-Spaetzle

The tiny German dumplings find a delicious partnership with lightly caramelized itty-bitty cauliflower and onion pieces. Making this side is a perfect starch and vegetable dish. Spaetzle is surprisingly easy and fun to make, too. They are essentially teeny soft egg-pasta bits. There are all different methods to make it, such as spaetzle makers or pushing through a colander which is our preferred method- it is sometimes easier (and more fun) with a buddy.

Seared Chicken

Just prior to searing the chicken it is dipped in a little flour. Use brown-rice, whole wheat or even white flour to give it a lovely, nearly crispy crust.
