Strawberry & Lavender Yogurt Crepes

Make the lavender syrup in advance, if possible. Otherwise, get it ready first and allow it to simmer as you start the crepes. Make the crepes. As they are cooking prepare the Strawberries and Lavender Yogurt.

There is something slightly intimidating about making crepes, but the batter is simple and the rest is just a bit of technique. I always plan to make a few ‘mistake’ crepes to enjoy as a snack (chef’s treat!) to make sure I have added enough salt or butter to the batter. If they are sticking to the pan, try a non-stick pan or add more butter before you pour in the batter. The recipe serves only two or just one hungry dude, so use this as a starting ratio to double, triple or increase as needed.

Lavender Yogurt with Strawberries

Several years ago Rachel’s Organic, made a lavender yogurt I loved, except I found it a tad too sweet for my taste. This is my version by infusing honey with lavender and swirling it into thick, greek style plain yogurt. Thinner yogurt works too, but when it is thick the honey sauce works a bit better.
