The Food
In less than a week, it will be Mother’s Day! I dedicate this meal plan to all of the moms who intimately know the challenges of getting anything on the table, much less something delicious and nourishing. I hope Lilly’s Table has truly been a tool that makes eating consciously smooth and silky. Please do all the moms you know a favor and recommend Lilly’s Table!
So, for all of you mamas on Lilly’s Table, this week is for you. Let’s start with some playful, nutrient packed dishes, such as the Asparagus Soup with Smoked Trout, a Spring Root Salad and Lemon Poppy Seed Dressing, Strawberry Almond Lentils with Grilled Artichokes and Garlic Scape Tahini, Grilled Trout with Grilled Cauliflower and Blue Cheese Vinaigrette.
Of course, breakfast in bed is an excellent way to start any morning and for me Crepes stuffed with Lavender Yogurt and Strawberries are just about perfection on Mother’s Day. Send these recipes to any one who may need a hint as to what you are craving.
Make extra crepes (or make someone else do it!) and then stuff them with creamy greens to make the Spinach Stuffed Crepes with Roasted Carrots.
Now, not to be missed, this Tuesday is Cinco de Mayo. A day that is just about American as St. Patrick’s Day. Therefore it is the perfect time to celebrate your favorite Mexican-American cuisine. Crispy Beef Tacos are unique to the United States and great for the 5th, especially when topped with Guacamole. Optionally, you could also depart slightly with the Guacamame Salad paired for lunch with Black Bean Dip and Homemade Chips or for breakfast as a Tostada with Egg.
