Asparagus Soup with Smoked Trout & Spring Salad with Lemon Poppy Seed Dressing

Start with the salad dressing and smoked trout, set aside. Prepare the asparagus soup. While it starts to simmer, cut up everything for salad. Puree the soup. Toss the salad with the dressing or serve on the side. Serve the smoked trout on the soup or on the side for diners to dollop on themselves.

This is a tossed salad of greens & thinly sliced spring root vegetables. Left undressed and sealed well in the fridge this salad will last several days providing you with quick veggies whenever you need. Use a favorite dressing to top it or do it Italian style- drizzled with a beautiful extra virgin olive oil and an aged thick balsamic vinegar.

Smoked Trout Cream

Mmm… Smoky Trout mixed into creaminess. Make this thicker by using all cream cheese or smoother with all strained yogurt or sour cream. You can even make it decadent with creme fraiche.

Brilliant green asparagus soup tastes as bright as it looks. We enjoy ours a tad chunky, but if you prefer a smoother silkier soup simply strain through a wire mesh strainer. It is also lovely hot or chilled.
