Black Bean Dip

Whip up this dip and serve hot or cold as an easy lunch or tasty snack. A Hatch Chili is an anaheim chili that has been roasted. If you cannot find them fresh or frozen, canned green chilies work as well.

Ingredients

  • 1 teaspoon olive oil
  • ½ cup onion
  • cup black beans, drained
  • 2 hatch chilis, or 1 small can
  • ½ cup cilantro, minced
  • 2 cloves garlic, minced
  • 1 lime, zest and juice
  • 1 tablespoon cumin, ground

Serving Size: 4 People



 

Preparation Instructions

Sauté the onions in the olive oil over medium heat until just translucent.

Add the onions, black beans, hatch chilies, cilantro, garlic, lime zest & juice and cumin to a blender or food processor. Pulse until mostly blended. Add a splash of water if necessary, especially if using a blender.
