Spicy Green Egg Bake

Starting with a green enchilada sauce these eggs are quick to toss together and bake while you finish getting ready for your day. Making these an exciting variation on you weekday breakfast.

Ingredients

  • ½ cup enchilada sauce
  • 2 eggs
  • 1 tablespoon cilantro, optional for garnish

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 375.

Place a 1/4 cup of enchilada sauce in a small baking dish such as a ramekin or muffin tin.

Crack the egg and gently slide on top of the sauce. Sprinkle cheese on top if desired.

Bake for 8-12 minutes depending on how well-done you like your egg yolks.

Making this for a crowd?
Plan on about 1/4-1/2 cup of enchilada sauce per egg. After that you can use larger baking dishes depending on the quantity you are making.

Fill the enchilada sauce about an inch or two high in your dish. Baking temperature and times are the same as above.
