Brilliant Green Enchilada Sauce

from Spicy Green Baked Eggs, the Week of May 11, 2014.

Take a simple tomatillo based salsa (our favorite is White Girl Salsa) or a homemade variety and blend it with a puree of dark leafy greens to create a doctored up, flavorful, nutrient packed sauce perfect for topping enchiladas and more.

Ingredients

  • 1 teaspoon coconut oil, optional
  • 3 cups greens, roughly chopped, chard, collards, spinach, etc
  • ¾ cup water, or broth, for a bit extra flavor
  • 1 cup salsa verde

Serving Size: 2 People



 

Preparation Instructions

In a skillet over medium heat, add the coconut oil if using and toss in the chopped greens. If not using the coconut oil, add a splash of water. Saute or steam until just barely wilted. Transfer to a food processor or blender with at least half of the water and half of the salsa.

Puree the sauce.

Transfer back to the skillet and bring up to a simmer. Add the remaining salsa.

If you want a smoother sauce add more water as needed. If you want the sauce to be thicker, just continue to simmer to your desired consistency.
