from Mango Chutney Brie Quesadillas with Spicy Cilantro Layered Salad, the Week of June 1, 2014.
View the previous recipe for this meal.

Drizzle on salads, tacos, and even as a marinade. Start with just a bit of the jalapeño until it is the spiciness you prefer. If it tastes too spicy, no worries as the flavors spread well when added to dishes.

Ingredients

  • 1 inch piece ginger, peeled and chopped
  • 1 clove garlic
  • 1 teaspoon jalapeno, chopped, or more to taste
  • 2 cups cilantro, stem removed, washed well
  • 1 can coconut milk
  • 1 teaspoon agave nectar
  • 1 teaspoon salt
  • 1 lime, juiced

Serving Size: 8 People

Preparation Instructions

Place the ginger, garlic, and jalapeno in a food processor or blender. Blend a few times until finely chopped. Add the cilantro and coconut milk. Blend until the cilantro is finely chopped and combined. Add the agave nectar, lime juice and salt. Add more or less of each to your personal taste preference.
