Spinach Eggs and Cherry Walnut Smoothie

Prepare the spinach eggs and place in the oven to bake. Once they are cooking away, place all of the smoothie ingredients in a blender. Whirl up the smoothie as soon as the Spinach Eggs comes out of the oven. Serve with toast, if desired.

Spinach Baked Eggs

A large bunch of spinach cooked down is the perfect amount for two servings of nutritional goodness for breakfast. It is a great way to use up extra spinach or dark leafy greens. For a flavorful punch, a sprinkle of Parmesan is lovely but not necessary. In summer if you have a tomato to spare, chop it up and add it on top.

Cherry Walnut Smoothie

Cherries and walnuts are such good friends that blending them together makes breakfast feel a bit more extravagant, although the protein from the nuts nicely balances the rest of the sweetness of the drink. Frozen fruit will yield a thicker chillier beverage. Make this vegan by substituting almond milk for the milk and yogurt in the recipe.
