Eggs on top of Polenta & Greens

Prepare the polenta or warm leftover polenta. Heat two separate pans on the stove top. Add greens to one skillet and wilt. In the other pan, prepare the eggs. Place the greens on top of the polenta and finish with a happy, runny drippy egg.
