The Food
The 4th of July is on it’s way and while Halloween manages to produce the most candy, this patriotic day seems to celebrate all foods processed. There are certainly some scrumptious alternatives to toss on your grill instead, including Grilled Zucchini Skewers, Grilled Shrimp with Yogurt Basil Aioli, Grilled Polenta, Grilled Asparagus, and the potatoes for our favorite Grilled Potato Salad.
That all being said, I am a bit of a sucker for hot dogs on this time of year. I do my best to find the happiest grown & produced dogs I can find, but then I doll them up Sonoran Style for the ultimate treat. Serve it with the Salvadoran Curdito Cabbage Salsa to balance out the need for extra veggies.
We also spend the extra dimes on the happiest cocktail dogs we can find, which are fabulous skewered up with snap peas to become the family favorite Snap Pea & Little Smokie Skewers. When we can’t find the mini dogs we simply, cut the big ones into 2-3 inch pieces. Grab an extra big handful of snap peas and do them up into these Herb & Goat Cheese Snap Peas, too.
Now that we got the patriotic processed treats out of the way, do not forget about all the salad possibilities: Pesto Pasta Salad, Creamy Broccoli Salad, Curdito, Macaroni Salad and The Wedge.
Not in the mood for a side of salad? The Herb & Goat Cheese Snap Peas, Roasted Spring Onions & White Beans and Polenta & Fresh Tomatoes are all easy accompaniments for summer’s fresh fare.
For a berry, happy Americana morning, try the Red, White & Blue Almond Pancakes. Another breakfast option, uses leftover Polenta with Runny Eggs & Wilted Greens.
