Grilled Potato Salad, Wedge Salad & Grilled Asparagus

As the potatoes grill first, whisk up the dressings for each salad. Also, sear the bacon if using. Prepare the other vegetables, cutting the iceberg into a wedge, and whisking the dressing. Once the potatoes are done, add the asparagus to the grill and quickly sear on each side. Toss the potato salad and serve the Wedge drizzled with toppings. It’s best served while the potatoes and asparagus are still hot.

Grilled Potato & Greens Salad

Potatoes are grilled and tossed with a lemon yogurt dressing and a handful of greens. When the acidic yogurt hits the hot potatoes, a slight curdling effect occurs with little globs of flavor nicely distributed throughout. Use this simple recipe as a base for adding more veggies as available.

Yogurt Herb Ranch Dressing

This easy dressing is an excellent substitute for chemical-dense ranch or buttermilk dressings or dips. Adding yogurt will increase the amount of good bacteria acidophilus in your dressing. Although, thick cultured buttermilk is a great substitute. If you want a thicker, ranch to dip, use greek yogurt or cultured sour cream instead. If using a fresh lemon, add the microplane grated lemon zest for a flavor boost. Use your favorite herbs that are available. If you are not a garlic lover, this is tasty enough without it.

Wedge Salad

Classic, retro whatever you want to call it the Wedge Salad is just about the only way to eat Iceberg lettuce and that is why we love it. Iceberg is hardly known for its high-nutrients but rather it serves as a lovely vehicle for garden fresh tomatoes, yogurt-herb dressing, and a bit of bacon & cheese just tops it all off. Make your own dressing from scratch if you can- our recipe comes together quickly. Make this vegetarian, by skipping the bacon and adding salty nuts or extra cheese.

Grilled Asparagus

This could easily become your favorite way to eat asparagus as thick stalks take on amazing slightly charred flavor with an almost creamy center. The actual cooking time depends on the thickness of the asparagus, just watch it and pull it when they are tender to the bite with dark stripes.
