Grilled Polenta

from Bruschetta Grilled Chicken & Zucchini Marinated Salad, the Week of August 3, 2014.
View the previous or next recipe for this meal.

Crisp on the outside and soft in the middle- grilled Polenta is a unique gluten-free side for a barbecue. Start with prepared Polenta which comes in tubes usually sold near pasta. Alternatively, make your own from scratch, chill it overnight and cut it into pieces to grill.

Ingredients

  • 1 polenta, tube or 1 homemade batch- chilled
  • 1 tablespoon olive oil, extra virgin
  • 1 pinch salt, to taste, optional

Serving Size: 4 People

Preparation Instructions

Heat a grill on high or medium-high if preparing other items. Slice the polenta tube into 1/2 inch to 1 inch slices. If using your own chilled version cut into triangles or another shape you may prefer. Pour the olive oil into a shallow bowl. Dip each side of the polenta pieces into the olive oil. Rub excess oil onto the next piece until each one has a thin layer.

Place on the grill. Sear for 3-5 minutes until char marks appear and the polenta removes easily from the grill. Flip and repeat on the other side.

Finish with a sprinkle of sea salt if desired.
