Asian Cucumber Salad

A vinaigrette marinated salad with just a kiss of sesames. If you cannot find mirin use a bit of your favorite sweetener instead. The cucumber slices will almost ‘pickle’ with time so enjoy these immediately or after they have chilled out and absorbed more flavor. If you love onions, a few slices of sweet onions would work well in this salad.

Ingredients

  • 1 cup cucumber, thinly sliced
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon mirin, or a teaspoon of sugar or agave nectar
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • ¼ teaspoon salt

Serving Size: 2 People



 

Preparation Instructions

Whisk together the rice wine vinegar, mirin, sesame oil, and salt. Toss in the cucumber slices and sesame seeds.

Adjust an flavors to taste and enjoy.
