The Food
Walking around my neighborhood, I am overjoyed to see so many fellow gardeners are starting to really benefit from their harvests. And heading to the Farmers Markets makes me silly excited to see all of the possibilities in store for the upcoming weekly meal plans.
Start this week cooking outside, as you skewer up the bounty with the Grilled Zucchini Skewers, the Caprese Skewers and some Grilled Polenta alongside.
Next, ball up these Eggplant Patties to dip with Tahini Sauce and serve with a Chunky Tabbouleh salad, too.
Keep your oven turned off and enjoy the Thai Watermelon Soup, Sesame Peanut Noodles, Asian Cucumber Salad, and a main entree of Smoked Salmon Nicoise Salad.
Peaches are ripening into delight as well as other stone fruit that can be easily substituted in these recipes. The Peaches n’ Chicken with Summer Squash Plum Avocado Salad is a simple dinner that feels more elaborate. The Black Pepper Yogurt & Granola with Peaches, Honey & Proscuitto takes a sweet morning treat and gives it a savory twist. The Black Pepper Parmesan Granola is also tasty sprinkled across the Summer Squash & Peach Salad.
For a simple breakfast, the Squash Scramble Pitas use up the abundant zucchini and is easy enough to take on the go for busy mornings.
