Wedge Salad

Classic, retro whatever you want to call it the Wedge Salad is just about the only way to eat Iceberg lettuce and that is why we love it. Iceberg is hardly known for its high-nutrients but rather it serves as a lovely vehicle for garden fresh tomatoes, yogurt-herb dressing, and a bit of bacon & cheese just tops it all off. Make your own dressing from scratch if you can- our recipe comes together quickly. Make this vegetarian, by skipping the bacon and adding salty nuts or extra cheese.

Roasting brings out the natural sweetness of corn. It is simply tossed on a grill or grill pan over medium heat and rotated periodically until toasty and tender.

Yogurt Herb Ranch Dressing

This easy dressing is an excellent substitute for chemical-dense ranch or buttermilk dressings or dips. Adding yogurt will increase the amount of good bacteria acidophilus in your dressing. Although, thick cultured buttermilk is a great substitute. If you want a thicker, ranch to dip, use greek yogurt or cultured sour cream instead. If using a fresh lemon, add the microplane grated lemon zest for a flavor boost. Use your favorite herbs that are available. If you are not a garlic lover, this is tasty enough without it.
