Butternut Mac n Cheese with Trees

Start buy roasting the squash if not already done. Make the white sauce and pasta. Assemble and bake. While it does its final cooking, steam the broccoli. If you would like them to appear more like trees, start with a head of broccoli, and cut them into long stemmed florets. After they are steamed and the macaroni is baked. Press them into the casserole dish for a forest of deliciousness. Sprinkle the trees with grated Parmesan for a bit of ‘snow’.

Butternut Squash Mac n Cheese

A creamy white sauce pureed with squash brings new life to the classic macaroni pasta bake. We use butternut; feel free to substitute your favorite. A food processor or blender will make your life easier for pureeing the squash. If you have a larger squash, more than you need, roast it all and bag it up in one or two cup portions for future dishes.
