The Food
Harvest Festivals are all around and bringing the goodness home is when the real fun can begin. Walking away from a pumpkin event without some sort of winter squash is plain silly. So, grab one and roast that squash up into goodness. Once you have created a lovely puree, the possibilities for the week begin.
Our family favorite Butternut Squash Macaroni & Cheese is complete with Broccoli ‘Trees’. For a simple breakfast, swirl the squash into the simple Sage & Squash Egg Bakes. More of the orange puree is whipped into the Squash Nacho Cheese to dollop across Potatoes with Broccoli.
For your next Game Day, serve the Nacho Cheese with Homemade Tortilla Chips, Black Bean Dip and Pico de Gallo made with the last tomatoes of the season. If that sounds like too much work, mix & match the homemade options with your favorite low-processed store bought selection.
The Harvest Chili is the perfect crockpot meal that can sustain you for more than one throughout the week. Make a big batch to enjoy for a couple of meals or pack up for lunches. Serve with the Polenta Croutons and a simple Spinach Salad.
Having ingredients on hand for a seasonal salad such as the Creamy Blue Pear Salad can save the busiest days. Make extra dressing, prepare the greens ahead, have the nuts & dried fruit on stand by. When it is time for dinner, simply slice a pear (or substitute apples) and toss together the ingredients. The main dish can change. One of my favorites to pair with this salad is the Fish Almandine.
A big Roasted Chicken & Grapes also pairs nicely with the Pear Salad. The next day, leftover chicken works whipped into the Sonoma Chicken Salad for lunches on the go.
