Creamy Blue Pear Salad

A simple creamy yogurt + blue cheese dressing is drizzled on crisp pears, nuts & dried fruit all over spinach or your favorite greens making for a perfect holiday side dish or a celebratory week day meal.

Ingredients

  • 1 pear, thinly sliced
  • 1 lemon, zest and juice
  • cup plain yogurt
  • 2 tablespoons mayonnaise, or more yogurt instead
  • 2 ounces gorgonzola cheese, or your fave blue
  • 2 tablespoons olive oil, extra virgin, or walnut oil
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 4 cups spinach, or other leafy green
  • ¼ cup walnuts, crumbled in pieces
  • ½ cup dried cranberries, or golden raisins

Serving Size: 2 People



 

Preparation Instructions

Thinly slice the pears and toss with the lemon juice. Set aside.

Whisk together the yogurt, mayonnaise, cheese and lemon zest if using. Slowly drizzle in the olive oil while whisking. Season the dressing with salt and pepper to taste, if desired.

Fill plates or a bowl with the spinach. Top with the pears, walnuts, and cranberries. Drizzle the dressing all over.
