Egg & Pork Quesadillas with Pomegranate Salsa

If the salsa is not ready to go, prepare this first. Make the pork quesadillas. Set aside in a warm spot and quickly sear up the eggs. Serve the eggs on top of the quesadilla with a dollop of salsa alongside.

Pomegranate Salsa

Jewel seeds from the pomegranate make a delightful fresh salsa. Adjust the spiciness as desired. If you like it mild, start with just a bit of the jalapeno and then add more to taste.

Such a simple way to use up leftover pork. Add extra seasonal vegetables as available. Top with Pomegranate-Persimmon or Cherry Salsa are ideal when in season, but another fruit salsa will substitute nicely as available.

We like a runny egg yolk in my home, but sometimes flipping an egg over easy will increase the risk of the yolk breaking and inevitably cooking the whole darn thing. This method makes a simple fried egg a bit easier to master without the flipping.
