Colorful Kale

Carrots, peppers & onions decorate this kale into sweetness.

With their thin skins bell peppers tend to be hit heavily when pesticides are used, so if you cannot find organic bell peppers look for roasted or frozen organic peppers instead. If that doesn’t work try more onions & carrots instead.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, shredded or finely chopped
  • 1 bell pepper, organic, colorful, chopped
  • 1 bunch kale, cut in thin strips
  • 1 pinch salt, to taste

Serving Size: 2 People



 

Preparation Instructions

Drizzle the olive oil in a skillet over medium heat.

Toss in the onions, shredded carrots and chopped bell peppers. Saute for 3-5 minutes until just softened.

Toss in the kale, increase the heat to medium-high and saute until just wilted. Season with salt and pepper (if desired).

Serve as a side dish.
